When Dr. David Jenkins published a detailed list of foods and their different effects on blood sugar, he had no idea that his discovery of the “glycemic index” would shape the diet industry for years to come. Today, major diets like Atkins, The Zone, South Beach and many more all make use of the scientific groundwork he created and his research has influenced the dietary guidelines promoted by the World Health Organization, the U.S. National Academy of Sciences and national diabetes associations around the world.

It’s safe to say that David Jenkins’ past discoveries have had a huge impact on the average American’s diet and the way millions of people view health and weight loss. However, Jenkins now has even more wisdom to share with the world. These days, this expert on health and nutrition is following a strict vegan diet and would like to advise others to do the same.

Earlier this year, Jenkins became the first Canadian recipient of the Bloomberg Manulife Prize for the Promotion of Active Health. During his acceptance speech, the doctor shared that he has switched to a diet completely free of meat, fish and dairy for both health and environmental reasons.

Studies have shown that following a well-balanced vegan diet can have amazing benefits for your health. Vegans tend to be thinner and have lower levels of cholesterol, blood-pressure, diabetes and cancer than their meat-eating peers. Vegans also consume significantly higher levels of healthy fiber, magnesium, folate, vitamin C, vitamin E, iron and phytochemicals while ingesting less calories, saturated fat and cholesterol.
